Ingredients:
- 3-4 tbsp of Tarboush Kabsa Seasoning
- 5 Tarboush Cloves
- 4 Tarboush Cardamom Seeds
- 2 dried bay leaves
- 1 cinnamon stick
- 2 red onions sliced
- 1 tbsp minced garlic
- 1 green chili (optional)
- 1 whole chicken, cut into 6 pieces or 3 lb of bone in chicken legs
- 2 tbsp oil
- 2 tbsp tomato paste
- 2 medium carrots, thinly sliced
- 3 chopped tomatoes
- 2 chicken stock cubes
- 3 cups of basmati rice
- Salt
- ½ tsp of black pepper
Instructions:
- Heat oil in a large pan over med-high heat
- Add onions and saute for 3-4 min
- Add minced garlic, green chile and saute for 1-2 min
- Add bay leaves, cloves, cardamom, and cinnamon stick
- Add carrots and diced tomatoes and cook for 5-6 min
- Add chicken and Tarboush Kabsa Seasoning until brown and turn occasionally, for 20 min
- Add rice and water until everything is submerged (3-4 cups of water) and add chicken stock
- Taste and adjust for salt as needed (1-2 tsp of salt)
- Bring water to boil then cover the lid and let simmer for 15-20 min or until chicken internal temperature of 165 ℉
- Remove from heat and enjoy this Middle Eastern deliciousness!

Got the Kabsa spice blend this last weekend. Scanned the code, followed the recipe, it was as good as promised by the guys. Very good flavor indeed. A lot of food, so depending on the size of your crowd, might want to cut it in half.
